I made a vegetarian version of the quinoa stir-fry last night. I threw in whatever veggies I had on hand and cooked the quinoa the same way as in the chicken stir-fry. I didn't have fresh cilantro, so, for the first time, I used a couple of squeezes of the tube of cilantro (!!) I had in the fridge (I never get through a whole bunch of cilantro and I hate wasting it. I am hoping to grow a large amount in our apartment, but I think that will have to wait for the sunny Spring. So, in the meantime, I'm trying out alternatives!). I also added roasted cashews. Very good!
