Chicken Cacciatore

Our slow cooker came with a recipe book and I have only tried one or two of the recipes, so the other day I marked a few "to try." Here's one that sounds like a good everyday sort of dish. The ingredients are all ones I usually have on hand, although I don't often combine chicken and tomato sauce. I think I'll skip the canned mushrooms and go for fresh.

Serves 8


Ingredients
6 boneless chicken breasts (sliced in half)
olive oil
1 cup coarsely chopped yellow onion
4 8-oz jars tomato sauce
2 tsp dried oregano
2 tsp dried thyme
2 tsp salt
2 tsp pepper
2 tsp minced garlic
1 6-oz can sliced mushrooms
1/4 cup dry red wine (optional)
1 cup coarsely chopped green pepper

Directions
1. Coat bottom of slow cooker stoneware with olive oil, heat on stovetop ste to medium heat, and brown chicken. Drain and return stoneware to slow cooker heating base.
2. Combine all other ingredients with chicken. Place stoneware in slow cooker heating base, cover, and cook on low for 5-7 hours or high for 2-3 hours.
