Keen on "Keen-wah"

We've hit a recipe sweet spot lately. Two thumbs up! The hype about all the great benefits of quinoa motivated me to try making this meal and now I'm looking for more quinoa recipes. I think it will make a great vegetarian meal option. It can seem a little pricey for a 'grain' (although it's not a grain...) but if it's the main protein in your meal, it's actually a good price.


Modifications: I used green pepper instead of red; garlic powder instead of cloves; 4 pinches of crushed red pepper instead of a chile; and, 1/3 yellow onion instead of scallions. I also added 2/3 tsp ground ginger, an extra Tbsp soy sauce, 1/2 stalk of celery, and 4 mushrooms. I skipped the snow peas.

Preparation: your typical stir-fry vegetable and chicken chopping. The quinoa is super easy to cook and took just under 15 minutes.

Verdict: super-duper stir-fry! The meal involved a great melding of flavours. The cilantro (YUM!), quinoa, soy sauce and ginger were the major players. I was glad I added the extra Tbsp of soy sauce, since the quinoa really soaked it up nicely. I really enjoyed the texture of the quinoa and the hubby found the meal "exciting!" It must really be packed with protein because one bowl was enough for each of us!
