Apple Bread

The original recipe makes two loaves. Below is the recipe for ONE loaf. I added the most common notes from reviewers in parentheses. As I said the other day, I ended up with a loaf that was dry, so it may be because I didn't adjust the baking time for one loaf (30 min?) or maybe I need to add something else. Let me know if you get a good result.

Ingredients
1-1/2 cups all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup vegetable oil (some substitute applesauce for the oil)
1 cup sugar (*some people cut the sugar down, e.g. to 3/4 c and use a mix of white and brown sugar)
1 eggs, beaten
1/4 teaspoon vanilla
1 cup apples - peeled, cored, and coarsely chopped (most people doubled this and left the peels on)
1/2 cup broken walnuts (or other nuts)

Directions
In bowl, combine flour, cinnamon, baking soda, baking powder and salt; set aside. In large mixing bowl, place oil, sugar, eggs, vanilla and apples. Stir into flour mixture. Add walnuts and mix. Pour mixture into a greased 8-in. x 4-in. bread pan. Bake at 350 degrees F for 40-45 minutes or until bread test done. Cool for 10 minutes on wire rack before removing from pan.

We ate it with nutella, butter, and maple butter and it was good all three ways, or plain.

  1. I made this loaf again yesterday. I used a little less flour (1 1/3 c) (I used stone ground whole wheat flour both times I made it) and a little less sugar, plus two cups of lobo apples which I sliced with the peel on and then chopped in a blender (I never heard of that variety before last week!). The loaf is super moist and delicious. I think the biggest difference was that last time I used Granny Smith apples and they're not as juicy as the lobo. I also added chopped pecans to the top of the loaf before putting in the oven. Cooking time was somewhere around 35-40 minutes.

  2. I forgot to tell you that Fok and I made two loaves of this last weekend for our choir. We used sour cream in place of the oil. We found it to be a bit dry before putting it in the pan, so we added some milk. The two of them baked at the same time took approximately 40 minutes (one took a little longer because it was in a bigger pan). They turned out great, and got rave reviews. Thanks!

  3. Yes, I forgot to mention it looks wrong when you're about to cook it. All the juices of the apples come out in the heat and moisten it up.
