A crunchy, saucy stir-fry


Modifications: I used chicken breasts and added broccoli, celery, and some white onion. I reduced the salt (since salty soy sauce was going to be added) and used some jalopeno instead of red pepper flakes. I also used unsalted, unroasted cashews (I meant to roast them but forgot!).

Preparation: easy-peasy! The sauce thickens very quickly though, and was thicker than it looked. Stick to the 1 minute suggestion.

Verdict: Just what I was looking for. Not in the spectacular gourmet category, but a great recipe for regular rotation. The sauce was quick and consisted of everyday ingredients. It added a nice finish to the stir-fry. The cashews provided some crunchiness (along with the celery) and a nutty flavour. I don't feel any need to stick to the veggies they suggest and I'll just use whatever I have on hand and would normally stir-fry together.
