One-pan wonder


I am loving me these dirty-only-one-dish meals. And so delicious too! As I prepare for those days ahead where I might actually work for a living, I am thrilled to have come across such an easy, tasty, quick meal. I served it with some rosemary baby potatoes and some cheese biscuits.

Modifications:

None! I followed to the tee, and like you, loved the fresh thyme. I wonder if a 15th-floor covered balcony could be a good home to an herb garden...?

Preparation:

I prepared it all as planned until the chicken was finished cooking. The chicken breasts I had were gigantic, so after baking for ~50 minutes, the leek/herb mixture was a little watery. I poured it into a saucepan, added a little dijon mustard and flour, and simmered and stirred it until it was a little thinner than gravy. It had a really nice flavour; I will add this short step in the future.

The Verdict:

It was so tasty! The saltiness of the pancetta was a really nice balance to the chicken, plus the leeks and thyme made me think of home (a.k.a. France :) The pancetta I used was like yours, and I layered it on the top and bottom of the chicken. In the future, I would place the chicken on a roasting rack so the bottom would crispen up as well. Overall, I would give this one 4.2 double D's out of 5 ;)
