How I could choose a recipe, read a recipe, make a grocery list, gather all the ingredients, and then part way through the preparation realize I completely overlooked one thing is beyond me. Anyhow, it happened. A swig of white wine? Oh dear, none to be found here. And I had already done another last minute run to the grocery store for sweet potatoes (to go with beets in this side dish). Luckily, Alexander Keith's Pale Ale saved the day. A swig of white wine, a swig of beer, who's to know?
Which brings me to another choice I had to make, although this one in the delightful Vincenzo's deli - sweet pancetta or hot pancetta? I went for sweet, both because of my hubby's tastes and because I was not sure how hot the hot pancetta would be. Next time, I would go for hot though!

Substitutions: sweet onion instead of leeks, pale ale instead of white wine.
Preparation: I was a little puzzled by how to wrap the pancetta around the chicken, since my pancetta slices were all round, not strips like bacon. I carefully pulled them until I realized they had a small opening inside. I then slung them on the chicken like beads on a necklace!

Verdict: Jamie Oliver, you're brilliant in such simple ways. I am glad I had fresh thyme to put to use here. And I always say chicken needs something to dress it up - pancetta fits the bill nicely. A little crunch and some juiciness. A great way to make ordinary chicken into something worthy of serving guests.
By the way, my enjoyment of this recipe may go hand-in-hand with winning wife of the year award. Since I only needed a "swig" of beer, I poured the rest in a cold glass for the hubby as he walked in the door after a long commute home. When he then sat down to a meal that had two kinds of meat in it and managed to make sweet potatoes taste good to him,* he declared, "In the words of our nephew, congratulations!"
