Yellow chicken, you're the one...


First, the recipe changes: I used two boneless, skinless chicken breasts and made the sauce recipe for four servings. I cut the butter in half, as recommended by other reviewers. We were going to Mass tonight and the baking was taking longer than expected, so I ended up putting a cover on the baking dish for almost 15 minutes. That meant the sauce was more liquidy than glazey and I would change that next time. I served the chicken on top of rice with green pepper and celery.

Overall impression: Good. I liked having a sauce that soaked into the rice and flavoured the chicken. It was sweeter than I imagined it would be, which made the hubby fall in love with it. I was hoping it would taste better so that I could rank it as "excellent" but I don't think it made that grade. More spices would improve it, I think. Should have added some jalopeno left over from last week!

Tuesday worked well for Recipe Night. The hubby is at school most of the day, so was excited to come home to interesting food.
