Turkey Mini-Meatloaves, still in the pan. I didn't realize the picture was so badly focused until after I uploaded it.
Preparation: Easy. Although I don't usually like touching raw meat, I rolled my sleeves up and got into working the ingredients together with my hands.
You know what would be nice for onions? Something similar to a garlic press where you just crush it all. Finely chopping onions is tedious.
Verdict: A plain but reliable stand-by meal. The smell while it was baking was really, really good. However, I found the taste rather dull. I am told it is much more flavourful than traditional meatloaf, though. In the future, I would add more dijon mustard, add the barbeque sauce right into the meatloaf mix, and probably try some seasoning like rosemary. The hubby thought bacon bits might be tasty too.
I do think it will freeze well, and I'll find out how that worked next week.
