Pre-Lenten Pleaser


It was nice to have a slight departure from the usual -- that is, to resort to a little baking territory for once. We also enjoy pancakes in this household, but have never veered away from the usual recipe. Definitely a pleaser, served with bacon, maple syrup, raspberries, and a dollop of whipped cream.

Modifications:

I think that we were channeling each other on this one. While I used brown sugar only (1/4 cup), I did go for the 3 eggs, added cinnamon, and vegetable oil and butter combo for the pan.

Preparation:

Followed just as written: no fancy tricks or gifts hidden inside. (A friend once told me that her mom placed jewelry inside her Shrove Tuesday pancakes. Gifts of luxury, or choking hazards? I'll let you decide.)

The Verdict:

Yummy. I found the taste and consistency much like a muffin, which, while surprising, is not bad. Like you, it didn't occur to me how dense the extra egg would make these pancakes. I would also leave it to two in the future. As for the oats, I *loved* them. The texture and heartiness both suited these pancakes to a dinner meal. Overall, this recipe earns 4 flippin' flapjacks out of 5.
