Empanadapalooza

I have always liked food that is served neatly in one little package. Looks are deceiving -- what? A little pastry? No! A whole lotta goodness. I served it with spinach salad and a dollop of sour cream.

Modifications:

I used two cloves of garlic, added some cinnamon to the mix as per your suggestion, and used puff pastry in lieu of fresh made. What a determined gal you are!

Preparation:

I followed everything just as written, with the exception of the actual cooking portion. I thawed and rolled some puff pastry, and cut out square shapes for wrapping. I used an egg wash to seal the pastry, before reinforcing the seal with the prongs of a fork. The empanadas were baked at 400 degrees Fahrenheit for approximately 25 minutes.

The Verdict:

Yum! I liked the many flavours packed all together. I think that I would like to try a spicier version for a change. I found the sweetness of the tomatoes to be quite prominent, and would up the ante on the savory side of things next time. Overall, a pleasant experience (and easy, especially with the shortcut!)
