M-E does green fish

Delicious! Good pick! I was happy to find that the preparation was easy, although there were some minor hiccups along the way...

Substitutions:
~Tilapia instead of mahi-mahi. I didn't even bother asking the fish counter for mahi-mahi. I think that's the kind of thing you only eat at a resort... the hubby did in Mexico.

~Green jalopeno instead of serrano chiles. I couldn't find chiles at the three grocery stores I tried, so I went for fresh jalopeno over hot pepper flakes or chile flakes. See the fun that followed below.

~Roma tomatoes instead of cherry or grape tomatoes. They looked TOO GOOD in the store, so I scooped them up eagerly. Perfectly ripe!

~I used dried cilantro (which means cutting amount down to 1/3 of fresh)

~Regular balsamic vinegar instead of white balsamic vinegar. The jars of the latter were quite large and I have so much regular balsamic on hand...

The incident
So, remember that fresh jalopeno? While I was hurrying around the kitchen, the hubby came in and decided to cut off a piece and taste it. His reaction was immediate and required guzzling water until he could pour milk into a glass. I think he ended up with enough dairy to last him for three days. I smiled and shook my head, chopped up what I needed of the pepper and went to work on the fish... but either through the air or swiping my hand across my eye, I got some sort of jalopeno juice in there! BURNING! In my eye! Poured water over it, which provided about 3 seconds of relief, then pulled my contact lens out ("Kevin, turn off the pan! I'm too busy to put the fish on yet!"). Apparently my eye was closed for the water pouring, because the burning was getting worse! No redness, though, which was mildly comforting. Next step: Holding my eyelid open to flush with water. After I decided no more use would come of that, I paused long enough to make sure I had vision (serious burning!) and then grabbed the holy water from Lourdes to prevent any damage. I am happy to say I no longer have any pain and I can see just as badly as before.

The verdict
I enjoyed this recipe! It was a different meal, easy to make and quick, too. I liked the mildness of the fish and found the whole combination to be delicious. I do not have a food processor, so I used the blender - that made it difficult to finely chop the ingredients. Next time, I would put bigger chunks in the blender. The hubby enjoyed it, but was not swooning. I suspect he may be biased from the bad jalopeno taste in his mouth!

Note: this photo is not the greatest, but I was lucky to get one at all. The camera has become finicky and rejected four other pairs of batteries!
